5/1/14

Tomorrow's lunch is homemade pasta salad (made with tri-color veggie enhanced pasta, peas, diced cheddar cheese, and olive oil mayo), leftover rotisserie chicken, a few whole grain crackers, apple slices, and sunbutter for dipping.
I either roast a chicken or buy a cooked rotisserie chicken every couple of weeks. I shred it up and freeze it in portions to use for soups, chicken salad, tacos, etc. This will also come in handy for easy lunchbox protein portions - it's already bite-sized, and Roo loves chicken in just about any form.
I tossed the apple slices in some lemon juice which will hopefully keep them from turning brown.

4/30/14

This post is showing up early because generally I make Roo's lunch the night before.
Tomorrow's lunch is turkey meatballs, mini cheese ravioli, cooked chilled broccoli, baby carrots, tomato sauce for dipping, and mixed fruit. Yum!

Today's lunch was a hit!
He had chicken salad, woven wheat crackers, cheddar cheese cubes, orange slices, and ants-on-a-log with sunbutter. Roo isn't allergic to nuts, but one of his classmates is. Good thing he can't tell the difference!

It's Roo's first day of pre-school! He was so excited! He got to take along his brand new backpack, lunchbox, nap mat, and blanket. He has a slight Elmo obsession. ;)
Today's lunch was a whole grain wrap spread with mayo and chopped baby kale, layered with deli turkey, rolled and sliced. Sides were baby carrots, mixed fruit, and lactose free cottage cheese.

Hi, blog! I'll try to fancify this later, but for now this blog is just for me to journal and share. My son, who we will call Roo,  is 2.5 years old and started pre-school this week. Luckily, they are allowing me to pack his lunch every day. He is milk-sensitive, and sometimes even experienced childcare providers don't realize that something they're serving will upset his sensitive tummy. His no-no food list includes: regular milk and anything cooked with regular milk (boxed mac and cheese, pudding, etc), sour cream, cottage cheese, American cheese, and yogurt. He can have some cheeses in small amounts. So far, cheddar, mozzarella, parmesan, and ricotta seem to be okay. We do substitute some lactose free and vegan replacement foods, but we try to avoid soy.

Also, even though all childcare centers and schools here are mandated by the TX state nutrition program, their ideas of nutritious food are not always the same as mine.

So this is my venture into packing healthy lunches for my little boy every day. I'll also share other websites and resources I find as I go. Enjoy!
